Calf Ribeye Steak

I just did this awesome calf ribeye steak and felt like sharing.
As usual I took alot of pictures, enjoy.

Step1 :  The Rub

Salt
Roasted garlic
Parsley
Unions
Rosemary
Thyme
Lemon peel
Capers

Chop these ingredients into very small pieces and mix them up.
Afterwards put some olive oil to your mixture.

Step 2: Prepare the meat

Unpack it and use the rub on it.
Make sure it is everywhere!

After you've done that, let it rest in the fridge for one day.

Step 3: The barbecue

On the next day, it's time for the barbecue!
For getting some color, we will put our calf ribeye on a very hot spot of or barbecue.

When this is done, put it to a coretemperatur of 60°C (140°F).

After 2,5 hours it reached its goal and looked like this:

I served it with dumplings and mushroomsauce. It was delicious!

flip it around.

Do this a couple of times

Step 5:

When your pulled pork looks like this (core temperature about 90 °C/194 °F, 12 hours), it's ready!
Put it in a bowl and use a fork to pull it into alot of pieces (thats where the name pulled pork comes from!)

Your pulled pork is done now :)
I love to eat it with slaw, tzatziki and buns
